Main Dishes

Kalua Pig

5-10 pounds fresh pork butt

1/4 cup Hawaiian salt

1/8 cup liquid smoke

2 Ti-Leaves to cover the pork

Place pork butt in roasting pan. Sprinkle Hawaiian salt and liquid smoke and cover with Ti-Leaves. Cover with lid or foil and place in oven at 350. Bake for 3 hours. Kalua Pig is done when it can be shred with 2 forks. *Let shred pork remain in the pan to soak up the juices.

Chicken Long Rice

5 pounds chicken thighs or drums with skin

1 stalk green onion

1 package of long bean thread noodles

Hawaiian Salt


Side Dishes

Lomi Salmon

1/2 pound of Salmon (I prefer frozen fillets)

2 large tomatoes diced

1 large sweet onion diced

a few stalks of green onion chopped

Combine all ingredients and add Hawaiian salt to taste.

Chill and serve


Haupia – Coconut pudding dessert

Sweet Potato – Okinawan Sweet potato – freshly steamed, cool and chill to serve as a side dish to this meal!
